Chop 3 peppers, 2 carrots, 8 cherry tomatoes, 2 large mushrooms, 1 cucumber and one red onion into chunks.
Start to place the chunks on skewers, making sure to not put the same vegetable next to each other.
Open up a Bakewell Extra-large oven bag and place the skewers inside.
Add to the bag 1 teaspoon of olive oil, 3 chopped cloves of garlic, salt, pepper and mixed herbs.
Tie the bag up loosely with one of the ties provided and place on an oven proof dish.
Cook for 30-40 minutes on gas mark 5, or until cooked.
When cooked carefully remove from the bag and serve.
