Thai prawn rice in an oven bag

Preheat the oven to gas mark 6/200*C/400*F.

Whisk together two large eggs in a bowl.

Add the eggs to a frying pan, and move the pan around till a thin omelette is formed. Leave to cook for approximately 1 minute. Once set move the cooked eggs on to a plate. Roll this into a pancake and cut the egg into small strips.

In a large bowl add 750grams of cooked rice, the cooked eggs, 1 tablespoon of curry paste, 1 tablespoon of hot water, 1 tablespoon of fish sauce and the juice from 1 lime. Stir until the rice is coated.

Open up a Large sized Bakewell oven bag.

Add to the bag: 300 grams of peeled prawns, 100 grams of green beans and the rice.

Tie the bag loosely with one of the ties provided.

Place the bag in an oven proof dish.

Put the dish in the middle of the oven (making sure the bag doesn’t touch the oven sides or element).

Cook for approximately 20 minutes.

When the time is up carefully open the oven bag and serve.
