Sugar-free chocolate chip cookies

Preheat the oven to gas mark 5 / 190*C / 375F.

In a large bowl add together: 110g of unsalted butter, 10 tablespoons granulated sweetener, 2 tablespoon of water, 1 teaspoon of vanilla. Mix together.

In another bowl add together 140g plain flour, 1/2 teaspoon bicarbonate of soda and a pinch of salt. Mix together.

Combine both mixtures together adding 80g of 100% coco chocolate chips.

Using Bakewell baking paper, line a baking tray.

Using a large tablespoon, spoon out the mixture into round dollops.

Place the tray in the middle of the oven and cook for 10-12 minutes.

Once the time is up remove the cookies from the tray and let them cool on a wire rack.
