Rosemary and garlic chicken using roasting wrap

Preheat oven to 200*C.

In a small bowl mix 3 chopped twigs of rosemary, 7 chopped cloves of garlic, a teaspoon of olive oil and salt and pepper.

On a medium sized chicken, gently loosen the skin on the breast area.

Carefully put your mixture underneath the skin of the bird.

Add salt and pepper to the top of the chicken.

Using a roll of Bakewell roasting wrap, cut to size a piece of wrap using a scissors.

Place the chicken in the centre of the film.

Bring the foil edges together and twist to create a neat parcel.

Place the parcel into a roasting tray or oven dish and cook for 1 hour 30 minutes.

We recommend serving with roasted potatoes and seasonal vegetables.
