Roasted pheasant in a bag

Preheat oven to 350F / 175*C / gas mark 4.

Open up a large Bakewell oven bag.

Add to the bag: 1 pheasant, 50mls of reduced port, 1 chopped onion, 1 apple cut into quarters and 2 sprigs of thyme.

Close the bag with one of the ties provided.

Cut the top corner of the bag using a scissors.

Place the bag in an ovenproof dish and place in the middle of the oven.

Cook for approximately 1 hour.

When time is up and meat is cooked, carefully remove the bird from the bag.

Carefully carve the pheasant and serve with creamy mash and seasonal greens.
