Oven baked pancakes

Preheat oven to gas mark 7 / 218*C / 425F.

Using Bakewell baking paper line an 18″x13″ baking tray.

In a large bowl add together: 255g of flour, 64g of sugar, 85g of cornstarch and 2 teaspoons of baking powder.

Mix with this: 2 large eggs, 240mls of buttermilk, 2 teaspoons of vanilla extract and 5 tablespoons of melted butter.

Pour the mixture into the lined pan and shake to make sure the pancake is sitting evenly.

Put the pan in the oven for 6-7 minutes. It is cooked when the pancake bounces when touched.

Place the pan under the grill for another 2 minutes. When the pancake is a nice brown colour remove the pan and cut into square shapes.

Serve with fruit and syrup 🙂
