Preheat the oven to gas mark 7 / 220*C / 425F.

Cover a baking tray with Bakewell baking paper.

Wash 700g of potatoes and cut them into chunks.

Place the potato chunks into a saucepan of boiling water and boil for 5 minutes.

Drain off the water and cover with olive oil.

Transfer on to the baking tray, add salt and pepper and cook for 20 minutes (turning approximately every 5-8 minutes).

Fish can be added to a separate lined baking tray and cooked at the same time.

We recommend serving with mushy peas or a side salad 🙂
