Preheat oven to gas mark 4 / 180*C / 350F.

In a large bowl mix 450g of halved strawberries with 2 tablespoons of sugar and leave to set for 30 minutes.

Line an oven tray with Bakewell non stick baking paper.

Spread the strawberries out on the tray and place in the middle of the oven for 3 hours (or until the sides of the strawberries are hardened and the middle is still juicy). Remember to turn the strawberries every 30 minutes.

In a large bowl add 100grams of plain flour, 300mls whole milk, 1 tablespoon of oil and a pinch of salt. Use an electric whisk and mix together thoroughly .

Add to the mix some dried strawberries and using a spoon mix together.

Using a medium sized frying pan on a medium heat add a small amount of oil, when oil is hot spoon out the mixture and cook for 1 minute on each side or until golden brown.

Serve with cream and fresh fruit.
