Preheat the oven to gas mark 6/200*C/400F

Cut one large onion into slices. Add to a saucepan 1 teaspoon of olive oil and the onion slices, cook for 15 minutes on a medium heat stirring frequently.

Add 1 tablespoon of brown sugar and cook for a further 5 minutes, stirring frequently.

Open up a Bakewell medium sized oven bag.

Add to the bag your favourite flavour sausages and the caramelised onions.

Tie the bag loosely with one of the ties provided.

Place the bag in an oven proof dish and position in the middle of the oven (make sure the bag doesn’t touch the heating element)

Cook for 20-25 minutes.

Whilst the sausages are cooking, slice 4-6 large potatoes into quarters and place them in a saucepan of boiling water.

Boil the potatoes for 15-20 minutes or until they fall apart easily. Once cooked, drain the water from the saucepan and return the potatoes to the saucepan. Shake the potatoes gently under a low heat for 1-2 minutes to evaporate excess moisture.

Start to mash the potato with a masher until there is a smooth consistency. Whilst mashing add 60ml of milk, 1 tablespoon of butter and pepper and salt to taste.

Once the sausages are cooked carefully open up the oven bag.

Serve the sausages and onions on a plate, adding the mash. We recommend accompanying with peas and gravy 🙂
